Once both the mango and sugar are mixed, mix the milk. Run the mixer for 15-20 seconds only. The more milk is stirred, the more its texture changes. Over-churning causes the milk fat to separate. That’s why after mixing the milk, stir only so that the mango and milk are mixed evenly. By doing this, the smoothness of the milk will give the mangoshake a different texture.
