- 250 grams of Sargwani Sing
- 2 cups of yogurt
- 4 to 5 garlic cloves (finely chopped)
- 1/2 cup coriander (finely chopped)
- 1/2 cup spinach (finely chopped)
- 1 small onion (chopped)
- 2 green chillies
- 2 dry red chillies
- 5 sweet neem leaves
- 1 teaspoon Kasuri fenugreek
- ½ tsp salt
- 1 teaspoon cumin seeds
- ½ teaspoon of rye
- ½ tsp fenugreek seeds
- 1 pinch asafoetida
- ½ teaspoon cumin seeds
- ½ coriander powder
- ½ teaspoon turmeric
- 1 tsp chili powder
- 3 tablespoons of oil
- 1 cup of water
method of making
First wash the sargwani horn and then boil it in a pressure cooker for four to five whistles. After that, put a teaspoon of oil in a small pan, heat the oil, then put fenugreek seeds in the oil and after frying, add boiled sorghum, 1/4 teaspoon of salt, chili, coriander seeds and turmeric and cook for two to three minutes. Meanwhile take 2 cups yogurt and 1/4 tsp salt in a large bowl and mix well. Heat 2 tbsp oil in a pan, fry chopped onion and 4 to 5 garlic cloves till golden brown. Now add 1 tsp cumin seeds, pinch of rye, pinch of asafoetida, 2 dry red chillies, 2 green chillies and few sweet neem leaves. Then add chopped coriander and finely chopped spinach, add some spices. After that saute it until the masala is fragrant then add curd and mix well and also add boiled sargani horn and add hot water as required. Mix it all well and cook for 2 minutes. Your Sargwani Singyukt Dahi Tikhari is ready.
